Directions
1.
Preheat your oven & pan
Set your oven to 450°F (232°C). Place a muffin tin or popover pan on the middle rack while the oven heats—this step gets the pan nice and hot for the perfect sizzle.

2.
Mix the wet ingredients
In a large bowl, whisk together the milk, eggs, sourdough discard, and melted butter until smooth and combined.

3.
Add the dry ingredients
Sift in the flour and salt. Whisk gently until most of the lumps are gone. (A few little lumps are fine—the batter should be thinner than pancake batter.)

4.
Transfer for pouring
Pour the batter into a large measuring cup or pitcher so it’s ready to pour quickly once the pan comes out.

5.
Butter the pan
Carefully pull the hot pan from the oven and drop a cube of butter into each well. Let the heat melt it into a puddle of liquid gold. If needed, pop the pan back in for a minute to finish melting.

6.
Fill & bake
Pour the batter into the buttered wells, filling each about 3/4 full. Slide the pan straight back into the oven and shut the door tight. Do not open the oven door.
Confession: my first batch of popovers didn’t puff because I peeked 🙈. Steam is everything here—open the door too soon and it escapes. So resist the temptation for 20 minutes! Bake at 450°F, then lower the heat to 350°F and bake another 10–15 minutes until golden and cozy.

7.
Make the whipped honey cinnamon butter
While the popovers bake, whip the softened butter until light and fluffy. Add the honey, cinnamon, and vanilla, then whisk or beat until dreamy and smooth.

Serve & enjoy
Remove the popovers from the pan and serve immediately with generous swirls of whipped honey cinnamon butter and a sprinkle of flaky salt. Even if they don’t pop tall, the taste will win you over. 💛

Notes
🥖🍯 The butter really is the star here — sweet, spiced, and silky, it turns a simple bake into something unforgettable. And don’t worry if you have leftovers (though they tend to disappear fast!). Just reheat a popover the next morning, give it a little smear of that dreamy butter, and it’s like breakfast got a hug. Cozy, golden, and downright irresistible — these popovers are comfort you can taste. 💛
