| 120 g (Β½ cup) unsalted butter, browned and cooled slightly | |
| 150 g (ΒΎ cup, packed) maple sugar (or light brown sugar) | |
| 1 large egg | |
| 1 tsp vanilla extract | |
| 80 g (β cup) sourdough discard (unfed, room temp) | |
| 60 ml (ΒΌ cup) apple cider β reduce to 30 ml (2 Tbsp) for concentrated flavor | |
| 200 g (1 β cups) all-purpose flour | |
| Β½ tsp baking soda | |
| Β½ tsp baking powder | |
| Β½ tsp fine sea salt | |
| 1 tsp cinnamon | |
| ΒΌ tsp nutmeg (freshly grated if possible) | |
| ΒΌ tsp ground ginger |
Cream cheese dip
| 2 tbsp maple sugar or powdered sugar | |
| 1 tsp apple cider reduction | |
| pinch of cinnamon |

Directions

Brown the butter
In a light-colored pan, melt butter over medium heat, stirring until golden brown and nutty (2β4 min). Pour into a bowl, including the brown bits. Cool to room temp.

Reduce the cider
Simmer ΒΌ cup (60 ml) apple cider in a small pan until itβs reduced by half (about 2 Tbsp / 30 ml). Cool completely. *I used extra for the cream cheese dip.

Mix wet ingredients
Whisk the cooled brown butter and maple sugar until combined. Beat in egg, vanilla, sourdough discard, and cooled cider reduction.

Mix dry ingredients
In another bowl, whisk flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.

Combine
Gently fold dry ingredients into the wet mixture until just combined. Stir in nuts if using.
Chill: Cover and refrigerate for 45β60 minutes for chewy, soft centers and crisp edges.

Bake
Scoop dough (about 2 Tbsp each) onto parchment-lined baking sheets. Optionally sprinkle with maple cinnamon sugar. Bake at 350Β°F (175Β°C) for 11β12 minutes, until edges are golden and centers are slightly set.

Let cookies rest on the tray for 5 minutes before transferring to a rack. Enjoy them warm, or once cooled, frost with the maple cream cheese dip for an extra decadent touch. Swipe, drizzle, or dip just the edges for a bakery-style finish. πͺβ¨
