| ΒΌ cup olive oil | |
| 3 eggs (2 eggs +1 egg white) | |

| β cup granulated sugar | |
| Β½ cup light brown sugar | |
| 2 tbsp freshly brewed coffee, cooled (or water or milk) | |
| 1 tsp vanilla extract | |
| Β½ cup unsweetened cocoa powder | |
| Β½ cup + 1 tbsp sourdough discard, at room temp | |
| Β½ cup extra chocolate chips for folding in or sprinkling on top (optional) | |
| Flaky sea salt, for topping |

Directions

Preheat your oven & pan
Heat the oven to 375Β°F. Grease and line an 8-inch square pan with parchment paper so your brownies lift right out.

Brown the butter
Add the butter to a small saucepan over medium heat. Let it melt, foam, and sizzle until the milk solids turn golden brown and it smells nutty and toasty. Pull it off the heat.

Melt the chocolate
In a clean medium bowl, add the chocolate chips. Stir the warm brown butter together with the olive oil, then pour this mixture right over the chocolate chips. Let it sit for a moment, then stir until glossy and smooth.

Whip the eggs & sugar
In a large bowl, beat the eggs, egg white, salt, granulated sugar, and brown sugar with a hand mixer until pale and fluffy. Whisk in the coffee and vanilla until the sugar dissolves.

Stir the cocoa powder and sourdough discard into the melted chocolate mixture (itβll look thick and a little dry at first).

Fold the chocolate mixture gently into the egg mixture with a spatula until just combined. Add the extra chocolate chips here if youβre going big.

Pour the batter into your prepared pan. Bake at 375Β°F for 35β60 minutes, depending on your pan and oven. Metal pans bake faster, while glass or ceramic pans may take closer to an hour. The brownies are ready when the edges are set and the center looks shiny and just slightly gooey.
